Super cheap and easy chicken tacos

Living on a budget can sometimes be painfully difficult, especially for food lovers… Even though I can usually manage to cook great meals for less than $15, I still struggle with all the temptations that Sydney has to offer. Believe me, every corner of the city is filled with wonders and scrumptious treats. And if there’s something that is truly amazing here, it is the diversity in terms of international food. From Thai to Lebanese food or even Mexican, the list goes on really.

So yes it is a given to say how fantastic it is to live in such an eclectic city, but at the end of the week my bank account often has a heart attack. And as you all probably experience with your friends, a meal out often leads to a few drinks as well. I realised that it’s a vicious cycle, unless you cook and invite friends along.

At the moment I am experiencing a Mexican mania and dream of chicken tacos from El Loco in Surry Hills. They are fast, easy to eat and sadly hurt my poor wallet! That’s why I made my own and found myself with leftovers that sustained myself for a few days. Cheap lunch for three days, all for less than $15. Absolute bargain!

On top of being cheap, it takes less than 20 minutes to create these rolls of happiness! This is certainly added to the list of my staple lunches/dinners and that I’ll attempt new and unusual versions soon.

Makes 8 chicken tacos

Ingredients:

8 medium sized tortillas (I used wholegrain one for this recipe)

2 large chicken breast, cut into thin strips

150g of mixed lettuce

2 large tomatoes, diced

1 avocado, cut into thin strips

1 red onion, finely chopped

2 cups of cheddar cheese

1/5 cups of light sour cream

a can of medium taco sauce (I used Old Del Paso)

2 teaspoons of taco seasoning

8 lime wedges

Method:

Rub the chicken with olive oil and taco seasoning.  Preheat a frying pan over medium high heat. Add chicken stirring with a wooden spoon, cook for 4-5 minutes or until cooked trough.

Build the taco with lettuce, chicken, avocado, tomato, onion, cheese, sour cream and taco sauce.

Squeeze a wedge of lime to add zest to the filling and enjoy!
